If you have bananas at home that are starting to look a little past their best, this is a quick little recipe to use them up :)
The recipe is really easy, but the muffins are delicious. This is my favourite recipe for using up bananas. You can make 6 – 8 larger muffins like the ones pictured above or about 12 smaller ones like the muffins pictures below – it really just depends on what muffin papers you use. The muffins in the blue cases have been topped with banana chips.
Makes: 12 Ready in: 30 minutes
1 ½ cups self raising flour
⅓ cup caster sugar
60g butter
⅔ cup mashed banana
¾ cup chocolate chips
1 egg
½ cup milk
Preheat the oven to 190°C. Prepare a standard 12 hole muffin pan.
In a large bowl mix together flour, sugar and butter until mixture resembles fine breadcrumbs.
Add in mashed banana, chocolate chips, egg and milk and stir to combine.
Spoon the mixture into the prepared muffin pans and bake for 20 minutes.
ok, so i'm guessing you have some kind of magical muffin papers that don't stick? :-)
ReplyDeleteWhether it's fruit muffins or chocolate chips.. they seem to stick like crazy for me... those muffins look amazing by the way.. going to try the Elsie's fingers.. my nana would make them too.. but hers here fatter and shorter

ReplyDeletehow do i stop the choc chips from sinking to the bottom? everything i make with choc chips in it does this for me! help!
ReplyDeleteI made these last night in preparation for a skiing weekend. They were so easy to make....not to mention delicious! I also love that because the ripe bananas are quite sweet you don't need to add too much sugar. I didn't have any caster sugar on hand so just used brown sugar instead-and they turned out great! Thanks so much for this delicious recipe! Nell x
