Lemon Tea Muffins

I’m on holiday and I thought I’d make myself a little treat. If you’d like to give these gorgeous little muffins a try, you will need:

1 cup flour
½ cup sugar
1 teaspoon baking powder
1teaspoon salt
½ cup fresh lemon juice
2 eggs
finely grated rind of 1 lemon
60g butter, melted and cooled (slightly)

Topping:
¼ cup melted butter
1 tablespoon lemon juice
½ cup sugar

1. In a large bowl mix together flour, sugar, baking powder and salt.

2. In a separate bowl add lemon juice, eggs and lemon rind to melted butter.

3. Stir into dry ingredients.

4. Spoon batter into a prepared muffin tin and bake at 190˚C for 15-20 mins or until a skewer is inserted and comes out clean.

5. Remove from tins while still warm , brush with melted butter and lemon juice (mixed together) and sprinkle with sugar.

6. Enjoy!

  1. Far out, made these on the weekend, I made two trays of mini ones. 24 came out of the oven and within a few hours there were 5 left! Very, very popular, absolutely loved these muffins, will definitely be saving this recipe and making them over and over again! :D looking forward to trying out more of your recipes now :)
