These are a step up from basic banana muffins as they have this delicious crunchy cinnamon topping :)
1 ½ cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
½ teaspoon salt
3 bananas, mashed
¾ cup white sugar
1 egg, lightly beaten
⅓ cup butter, melted
⅓ cup brown sugar
2 tablespoons all-purpose flour
⅛ teaspoon ground cinnamon
1 tablespoon butter
Preheat oven to 190°C. Lightly grease 10 muffin cups, or a tray line with muffin papers.
In a large bowl, mix together the flour, baking soda, baking powder and salt. In another bowl, beat together bananas, sugar, egg and melted butter. Stir the banana mixture into the flour mixture just until just combined. Spoon batter into prepared muffin cups.
In a small bowl, mix together brown sugar, 2 tablespoons flour and cinnamon. Cut in 1 tablespoon butter until mixture resembles a coarse crumb. Sprinkle topping over muffins.
Bake in preheated oven for 18 to 20 minutes, until a toothpick inserted into centre of a muffin comes out clean.

ReplyDeleteVery yummy and very easy! I did some plain, some with walnuts, and some with chocolate chips. I do NOT recommend the choc chips, but with or without nuts were excellent!! I also did the 2 bananas & 4 Tbsp of applesauce and it was great. The crumb topping is perfect. I had no problem getting 12 large muffins from the batter. A definate keeper!!
ReplyDeleteI have just made these this afternoon. Excellent and simple. I added mini M & Ms into the mixture and doubled it. I made half with the crumble topping and half plain with a chocolate button on top. My three sons (twins who are 5 and Mr 3) are delighted and they'll be enjoying them in their lunch boxes this week. I'll be keeping this recipe, thanks.
