These cookies are so yum and they taste healthy because they are packed full of oats, which are used instead of flour. Writing this post is making me want to bake another batch!
⅔ cup chunky peanut butter
4 tablespoons unsalted butter
¾ cup brown sugar
1 teaspoon vanilla extract
½ teaspoon salt
¼ teaspoon baking soda
2 large eggs
1 cup old-fashioned rolled oats, ground for 30 seconds in a food processor
1 ½ cups old-fashioned rolled oats
2 cups chocolate chips (I used milk and dark chocolate)
Preheat the oven to 180°C. Lightly grease or line two baking trays.
Cream the peanut butter, butter, sugar, vanilla, salt and baking soda in a bowl. Beat in the eggs. Mix in the ground oats, old fashioned rolled oats and chocolate chips.
Scoop tablespoon sized balls of mixture on to the prepared baking trays. Bake or 11 – 13 minutes. Remove from the oven and leave to cool on the trays.
